Fig & Arugula Flatbread

2 naan-style flatbreads

3 tbsp. fig jam

¾ c. Oddlygood Mozzarella-Style Plant-Based Shredded Cheese Alternative

8 fresh figs, quartered or cut into thirds

2 large shallots, peeled and sliced into rounds

1 garlic clove, minced

2 c. packed arugula

1-2 tbsp. balsamic glaze


Preheat oven to 425°. Spread fig jam over each flatbread. Top evenly with shredded Oddlygood mozzarella. Place shallots and figs evenly over the flatbread and sprinkle with minced garlic. Transfer to a baking sheet and bake for 12 to 15 minutes or until the cheese is melted and bubbly. Remove and drizzle balsamic glaze over each flatbread. Garnish with arugula and serve. Serves 2.
