Field Greens & Roasted Veggies Salad

Ingredients:
3 c. field greens lettuce mix
2 tbsp. feta cheese
¼ c. roasted mushrooms (instructions below)
¼ c. roasted artichokes (instructions below)
Handful of mixed green and red bell peppers
Handful of spinach
3 oz. sweet balsamic vinaigrette dressing of choice
Directions:
Gather all ingredients and chop up mixed greens (3 c. of field greens lettuce mix and spinach). Roast the mushrooms and artichokes by tossing ⅛ c. of olive oil with ½ tsp. of salt and pepper and roast on a sheet pan in the oven at 350º for 20 minutes. (Variation: If you’d like to skip this step, simply purchase preroasted artichokes and mushrooms.) Mix all ingredients together in a large mixing bowl. Top with 2 tbsp. of feta cheese. Add 3 oz. of sweet balsamic vinaigrette dressing. Enjoy!
