Beyond Beef Nachos

16 oz. (1 package) Beyond Beef

1 tbsp. extra-virgin olive oil

1 medium yellow onion, diced

1 tbsp. taco seasoning

1 tbsp. cumin

1 tbsp. lime juice

1 tsp. lime zest

1 large bag tortilla chips

1 large tomato, diced

¼ c. green onion

¼ c. cilantro

1 jalapeño, thinly sliced, de-seeded

Pinch of salt, to taste

Pinch of pepper, to taste

1 c. vegan queso (see note below)


Preheat oven to 425℉. Warm the oil in a large pan, add onion and cook for 1 minute. Add Beyond Beef and cook for 2 minutes. Add taco seasoning, cumin, lime juice and lime zest. Cook for about 4 more minutes. In a large baking dish, place tortilla chips and layer in the beef mixture. Add the queso. Bake for about 10 minutes, until the chips are golden and crispy. Garnish with tomato, green onion, cilantro, jalapeño, salt and pepper. Dig in! Serves 6 to 8.
