Our pizzeria is next door to an all-vegan coffee shop, and we started making this delicious vegan pie for their employees in 2005. We use our housemade spicy tomato sauce as a base, topped with fresh spinach, roasted pine nuts, green olives, red onions, and our roasted red pepper coulis. After baking, we add some freshly sliced basil. This is a delicious cheeseless pizza, but we can also add vegan cheese upon request.
